How much is too much?

How much of a tree’s canopy can be removed at one time?  Research and textbooks state that generally speaking no more then 20% of a tree’s canopy should be removed in one growing season.  If you own a fruiting tree, much less should be removed.  If more is taken then the tree could be come stress and produce “water sprouts”.
